Easter Feaster

Happy Easter!

If you haven't figured this out yet, I will make any excuse to bake. Today it's Easter, so why not make the mother load layered cookie bars from Picky Palate. They have been sitting on my Pinterest Recipe Board for quite some time. These Truly Ooly bars have 4 of the best cookie dough recipes jammed into one scrumptious bar, and then how about drizzling them with chocolate to top it off.

Cookie Sliders

Cookies are good, but cookies with frosting are even better. The only problem is if you frost a cookie on top, there is no good way to stack and store them or they get ruined. This weekend I came up with the solution for that: Cookie Sliders. If the frosting is in the middle you can stack them all you want and they will stay in mint condition. You can pack them to stay fresh and they will come out looking just as pretty as they went in.

For the sugar sliders I used my favorite sugar cookie recipe, and for the chocolate chip sliders I used the perfect chocolate chip cookie recipe. Then I added a dollop of white frosting in the middle and stacked 2 together. For the sugar set I added sprinkles to the sides. Enjoy!

Chocolate Chip Oreo Cookies

So, like I said yesterday I was on a baking bender last week. These tasty treats turned out oooohh so good. I love oreos and chocolate chip cookies, so this combo was perfect. I found my recipe from Lovin From The Oven.

The Best Caramel Bar You've Ever Had

So I was on a baking kick all last week. I made so many sweets it was ridiculous, especially since were heading to Florida and getting into bathing suits. Good thing my husband took most of them to work to share, otherwise I woud've devour everything.

This recipe for carmelitas caught my eye with the buttery, caramely, chocolatey goodness. I wanted to try something different and I don't normally bake with caramel so that was it. Also it has oatmeal in it, so that makes it healthy, right?!

Sandy

Since I arrived late Friday night back to New Jersey it has been devastating witnessing what has happened to the cities affected by sandy. Even when we were still an hour and half away we started to see the affects it had when we had to stop and get gas. We thought we were thinking ahead and stopping far enough out, but boy were we wrong. The lines to get gas were insane, and even sadder people couldn’t get along in peace so they have called back up at all stations with about three police officers.

Anyways, yesterday we ventured over to Hoboken because its was close enough to walk to since around us all public transportation is still suspended. We had heard it was in much worse condition than our area. Most of the city was still without power, homes, food, blankets, heat, etc. Walking around I had an idea, since some of the restaurants that had enough resources were cooking outside and giving away free meals I thought well I am sure people would like something sweet to get with it. A quick trip to the grocery store and a couple hours in the kitchen later we had candy cookies and cookie brownie oreo bars to hand out.

Potluck

image

One of the best and worst parts of working at a salon with lots of women is there is always food around. Best because who doesn’t love to eat all day long. Worst because you are constantly eating all day long.
When you work long days with only short breaks here and there you become good at grazing.

What better way to do this than having one big feast in the back room. Splurge’s POTLUCK!
The rule is anything on the back room table is free game and this couldn’t be more true than it will be tomorrow as everyone has signed up to bring a dish to share.

Seeing that it is fall and as far as I am concerned Halloween is the kick off to feasting season this potluck couldn’t come at a more appropriate time. I decided to make pumpkin monkey bread. Warm, ooey, gooey, can’t keep your hands off, pumpkiny, goodness…
I found my recipe here. I have made this many times so I know everyone is in for a real treat. Enjoy!

Pumpkin Monkey Bread
Ingredients
Bread
2 Tbsp unsalted butter
1/2 cup milk
2 1/4 teaspoons (1 envelope) active dry yeast
3/4 cup pumpkin puree
1/4 cup white sugar
1 tsp salt
2 1/2 cups bread flour
1 cup granulated sugar
2 tsp ground cinnamon
1/2 tsp fresh ground nutmeg
2 Tbsp unsalted butter
Glaze
2 Tbsp unsalted butter
1/8 cup brown sugar
1 1/2 Tbsp milk
3/4 cup powdered sugar
1 tsp vanilla

Directions
In a saucepan over medium-high heat, brown 2 tablespoons of butter, letting it bubble up and turn a dark golden brown but being careful not to allow it burn (turn black). Once browned, remove the pan from the heat and carefully add the milk, return to stove and heat through.* Pour the milk and butter into a bowl and allow to cool so it is no longer hot but also not cool (about 100-110 degrees F). Once it has reached a warm but not hot temperature add the yeast and 1/4 cup of sugar and allow to proof (this can take up to 8 minutes, the top will look foamy and the liquid cloudy). Then add the the pumpkin, salt, and 1 cup of flour. Stir until combined then add the rest of the flour 1/2 cup at a time and knead for 6 minutes, until the dough is smooth and elastic and just slightly sticky. If the dough is too moist, add extra flour 1 tablespoon at a time.
Move dough to a lightly oiled bowl and cover with a clean towel. Allow to rise in a warm place for 60-90 minutes or until doubled in size.

While dough is rising, brown another 2 tablespoons of butter. Add the sugar, cinnamon, and nutmeg and mix well. Making sure sugar evenly absorbs the butter. Set aside. Next, grease and flour a 9×5 loaf pan and set aside.

When the dough has doubled in size, punch it down and flip out onto a clean floured surface and knead with hands for 1-2 minutes. Roll dough into a 20×12 inch rectangle.** Evenly sprinkle the dough with the cinnamon sugar mixture and press into dough with palms of the hand. Cut the rectangle into 6 strips. Lay strips on top of each other and cut each strip into 6 even squares (cut in half then each half into thirds). Stack strips vertically into the loaf pan. Cover the pan with a clean towel and let rise for 30-45 minutes.
In the meantime preheat an oven to 350 degrees. After rising in the pan bake for 30-40 minutes (mine took 37 exactly) or until top is a very deep golden brown.
To prepare the glaze, heat the butter, milk, and brown sugar in a small saucepan. Bring to boil then immediately remove the pan from the heat and stir in the vanilla and powdered sugar
 .

*My milk was room temperature. Adding it cold to the butter can result in clumping. You can also heat the milk separately in the microwave if you’d like.

** If dough is difficult to roll out, cover with a towel and allow to relax for a few minutes then try again.
